Perfect Pumpkin PB Cookies

These cookies are super easy and perfect for fall (aka pumpkin spice season!). With a few substitutes for traditional baking ingredients, like coconut sugar in place of regular sugar, these cookies are also a feel-good way to indulge!

Pumpkin Peanut Butter Cookies
Ingredients
½ cup pumpkin puree
½ cup HomePlate Creamy Peanut Butter 
-½ cup coconut sugar 
½ cup almond flour
½ cup oats
1 teaspoon baking soda
1 teaspoon cinnamon or pumpkin pie spice ⁣⁣
1 teaspoon vanilla⁣⁣ extract
*optional but recommended: chocolate chips! 
Instructions

1. Preheat oven to 350ºF.

2. In a bowl, mix all of the dry ingredients until they are combined. Then add the wet ingredients and stir again until everything is well incorporated. Stir in chocolate chips.

3. Scoop dough into 1-inch balls and place onto a baking sheet lined with parchment paper. Bake for 12-15 minutes.

4. Serve with a drizzle of HomePlate Creamy PB and enjoy!
