Perfect Pumpkin PB Cookies

These cookies are super easy and perfect for fall (aka pumpkin spice season!) and cozy weather. With a few substitutes for traditional baking ingredients, like coconut sugar in place of regular sugar, these cookies are also a feel-good way to indulge!

Pumpkin Peanut Butter Cookies


  • ½ cup pumpkin puree
  • ½ cup HomePlate Creamy Peanut Butter
  • ⅓-½ cup coconut sugar
  • ½ cup almond flour
  • ½ cup oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon or pumpkin pie spice
  • 1 teaspoon vanilla⁣⁣ extract
  • ½ cup chocolate chips - optional but highly recommended!


  • Preheat oven to 350ºF.
  • In a bowl, mix all of the dry ingredients until they are combined. Then add the wet ingredients and stir again until everything is well incorporated. Stir in chocolate chips.
  • Scoop dough into 1-inch balls and place onto a baking sheet lined with parchment paper. Bake for 12-15 minutes.
  • Serve with a drizzle of HomePlate Creamy PB and enjoy!
