- ½ cup packed brown sugar
- ½ cup HomePlate Peanut Butter (we used Crunchy!)
- ½ cup unsalted butter, softened
- 1 egg
- 1 ½ cups flour
- ¾ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup additional granulated sugar
Instructions
- Preheat oven to 375°F.
- Using a mixer, cream the softened butter, brown sugar, and first ½ C granulated sugar.
- Add HomePlate Peanut Butter and the egg and beat on medium speed until well combined.
- Using a spoon or spatula, stir in flour, baking soda, baking powder, and salt until dough forms.
- Shape dough into 1-inch balls, then roll in the additional granulated sugar in a separate bowl.
- Place dough balls about 2 inches apart on an ungreased cookie sheet and use the palm of your hand to press the dough balls to flatten them just a bit. Then use a fork to create the criss cross pattern. Bake for 8 to 10 minutes or until edges are golden brown.
- Let cookies cool & enjoy!
